If you frequently do high-heat stir-frying or use multiple zones simultaneously, consider a higher-power or multi-zone induction hob. However, higher power demands higher circuit amperage and a dedicated power supply. For older or smaller apartments, first confirm your electrical panel's capacity to avoid frequent circuit breaker trips during cooking. For built-in models, plan for a dedicated power circuit and have an electrician check the wiring for safety.
Secondly, consider the number of cooking zones and installation method. Singles or small families, mainly using it for hot pot or simple cooking, can opt for a freestanding single-zone induction hob, offering flexible storage and relatively lower cost. If you cook frequently with multiple dishes, a double or more zone design is more suitable, and a built-in model can be considered for a flat, easy-to-clean countertop and a more aesthetic look. However, built-in installation involves countertop cutouts, ventilation, and future maintenance space. It's best to confirm dimensions and ventilation requirements with your cabinet installer before deciding on a model to avoid purchasing one that cannot be installed.
Third, pay attention to heat control and temperature stability. Fourth, consider energy efficiency and standby power consumption. Induction hobs themselves are generally more heating-efficient than gas burners, but differences exist between models. If energy efficiency labels are used in your region, prioritize models with higher grades for long-term energy savings. Also, many induction hobs consume power in standby mode. If the unit is always plugged in, check the standby power rating in the manual. Alternatively, choose models with a main power switch or an auto-shutoff function when idle, which is both eco-friendly and reduces electricity bills.
Fifth, examine safety design and certifications carefully. Although induction hobs have no open flame and are relatively safe, high temperatures, glass breakage, and electrical hazards still require caution. Choose models with multiple protections, such as automatic overheat shut-off, pan detection (auto-stop if no pan), child lock, timer shut-off, and overflow protection. Sixth, consider the panel material and ease of cleaning. Most induction hobs use ceramic or toughened glass panels, which are smooth, seamless, and easy to wipe. The BBE team previously compiled the Hong Kong Consumer Council's test results for 13 built-in and freestanding double-zone/full-surface induction hobs, focusing on comparing performance, energy savings, safety, and ease of use, providing buying recommendations and high-scoring model suggestions.
The Consumer Council tested samples with power ranging from about 2800W to 5,200W and prices from about $3,980 to $21,300, divided into 10 double-zone and 3 full-surface designs for easy selection by different families.
The evaluation covered five main areas:
Performance: Tested heating efficiency and heat distribution using water boiling and pancake cooking. Overall efficiency was around 85% to 90%, but some models had less even heat distribution.
Energy Saving: Compared standby energy consumption and energy labels. Some samples had lower actual efficiency than labeled and higher standby power consumption.
Safety: All samples passed impact, electrical insulation, and flammability tests, but some models had incomplete labeling.
Low Heat Control: Nearly 70% of samples did not meet international standards for low heat stability; only a few brands could stably maintain low temperatures. When both zones were used simultaneously, some models also had weaker power and noticeably slower heating.
